Adam Sinclair knows a thing or two about good food. The Port Macquarie chef has spent years working in the region’s fine dining scene. “I love the power of food and how putting good food on a plate can make people smile,” says Adam.

Adam was working as the head chef of Port City Bowling Club when the role of Food Services Manager and Head Chef at SCAS became available. With three children already a part of the SCAS community, he decided it was time for a new challenge.

Hiring a chef like Adam means that SCAS is now able to provide onsite food catering for our events and functions. “It is always going to be busy in food services here at SCAS. We definitely won’t be standing around twiddling our thumbs!” he laughs.

Despite this hectic schedule, Adam is adamant that all his food will be consistent, fresh and nutritious. It is this food philosophy that has inspired the menu for the new Iona Café, set to open early in Term 2. The café has been fitted out with state of the art equipment and Adam’s menu is designed around what this equipment can create. Wherever possible, Adam has sourced fresh ingredients from local suppliers. It’s a point of pride for him and he says customers will be able to taste the difference. “As well as being sourced locally, everything at the café is made in-house, from the pastries, cakes and slices to the sandwiches.”

“Our coffee is also from a local supplier, Peak Coffee, and we will eventually have a blend that is exclusive to St Columba and the Iona Café,” Adam shares.

“We want to create a café that is happy, fresh and convenient.”

The cafe menu is a closely guarded secret until the launch, but Adam did let slip one of his tasty standouts. “The steak sandwich is a favourite. It’s going to be a definite tummy filler.”

With the launch of the café looming near, Adam is feeling the excitement. “I have three kids of my own, but this café is my fourth,” he jokes.

The Iona Café will be open to staff, students in Year 11 and 12, parents and visitors to the School.
